What I do with beets is place them cut up in my tea kettle, where I put all kinds of other items, & have them on low boil on & off for days, & I drink this TEA all day. Inside this 'tea kettle' I have the rinds of my honeydew, orange peels, banana peels, wild spinach from my freezer, greens that are getting wilted, anything & everything of vegetative matter that works, & this is every day all day drinking. Oh yes, the big ingredient is the Yellow Dock I collected from my fields, I have enough of these dried seeds/leaves for 2-3 years. All kinds of RINDS have nutritive value, you'd be surprised - what people throw away has value. And a lot of things I just don't feel like EATING - like I got sick of eating beets, tiny tomatoes, turnips, dandelions, burdock leaves, wild lettuce, plaintains - they all go into the TEA KETTLE & that's how I get their benefits. Oh yes, you can also use evergreen leaves for tea - Spruce tastes really good, - the TIPS of Spring evergreens as they bud out are loaded with vitamin C.

The things they THROW AWAY like beet greens rinds of banana, oranges, pineapple & melon, the things they OVERLOOK, IGNORE, MOW OVER or KILL - like on their lawn or wild areas - dandelion, plantain, burdock, wild rose hips {seeds} if they only would save these items & USE them, they give LIFE!
