DIET DIARY - DR ESSELSTYN      DIET  1 30 25 

 From Rasa:

 Tonight I was desperate trying to figure what to eat for dinner that follows his regimen. Wow.

    I was going first to make soup but every soup I've made has chicken stock. It's all frozen. I will use that for the animals.

    I could not find any canned soup that is pure veggie, all had some even small hints of meat, he would not agree with that.  I will have to find cream of mushroom, cream of broccoli, cream of this & that to add to the leaves & veggies I make soup with.

    I have lots of pancake mix but this usually requires eggs although maybe one can use it without eggs? But pancakes are fried in oil - which is not allowed - I did buy a non stick pan I've not used yet because I'm not sure if the nonstick coating is bad - I wonder if pancakes would not stick?

    For a moment I thought: I can't do this. He's eliminated almost all that one eats. My next thought was pull yourself together, you can do it. It's not impossible.

    I remembered all the GREENS I have frozen which I have ignored - dandelion leaves, fronds, plantain, all the herbal greens I collected this summer. I got one package & boiled it. It was dandelion fronds, impossible to chew up but I figured the boiled water would have the nutrients. Then I placed RAMEN NOODLES into the water after I removed the dandy fronds, including his SPICES which are really good. So this made a soup & noodles. It was NOT bitter like dandys can be. The meal was DECENT, not terrific but I was OK with it. And had some walnuts & pecans on the side.

    William give me some idea what you eat, especially for dinner. Does your wife also do this? What percent of the diet do you follow - 90%? I want to be faithful because I believe in it & I want to heal my heart disease. I don't want to be a coward &  cheat except for the tiniest bit. My inner voice said I could eat FISH once a week. I will pray on it more. My freezer has lots of fish I was going to give to the animals.

    Tomorrow if weather permits I shall go to the grocery store & get all types of leaves, especially kale if they have it & bok choi if they have it, berries, more fruits, honeydew melon etc. And I will look for those non animal soups. 

    He is a FANATIC for the greens, greens, greens. He wants us to much on them 6 times a day with some balsamic vinegar. I did munch yesterday & today with apple cider vinegar, it's good. But am almost out of fresh leaves

    I am also drinking my HOT SAUCE & sauce made of horseradish, ketchup & garlic & I' drinking my 'pague tonic' which I have done for 20 years or more which is ginger, garlic, red clover, in apple cider vinegar.

    That's my report for now. I'm excited about this as I BELIEVE in the healing.     Rasa

Fish is the healthiest meat you can eat. So I think eating it once a week shouldn't be a big problem. I use a lot of herbs and spices in my food which add flavor and are good for you. 

 

My diet is for breakfast, rolled oats, with soya milk, spices, blueberries and grapes. 

 

Mid-day meal I just have cooked vegetables. Potatoes. Kale, carrots, mushroom, beetroot. red cabbage. But I don't have this all the time. I sometimes have other things, like sweet potatoes, spinach, sprouts, peas, runner beans and sweet corn. I also have salad in the summer. My wife and I have lentil and vegetable soup once a week. I like apple crumble and my wife makes it with oats, banana and dates. 

 My evening meal can be anything. Like bake beans, Tomato soup, I also have tofu on toast with herbs. Brown rice with sweet corn. I sometimes have Natto which I get at a local Asian shop. 

 

My wife doesn't follow my diet she still eats meat and lots of fish. I have problems trying to get her to eat greens. She will eat sprouts but not kale or spinach. And she does like fried food which she has now and then.

I just remembered a few things I missed out on my diet. I also have ground flax-seeds on my porridge in the morning. I also eat broccoli in my mid-day meal and sometimes I have oats with pineapple rings in my evening meal. 

You mentioned eggs. They are many vegan egg substitutes, I believe you can use banana for this. 



It depends how strict you want to be. It depends on your health, if your reasonably healthy then you don't have to be too strict, But if you have had a heart attack or stroke then it pays to be as strict as you can. 



My wife recently went to have a check up at the doctors and she was told she was pre-diabetic. That worried her, but I knew a lot about diabetes because by father was diabetic. So I told her to cut down on foods with sugar in them and also fat. She moaned about this but after a month or so she felt a lot better with less aches and pains and that encouraged her said she will try to stick to it.

 Thanks for the description William. It'll help me a lot. One has to be inventive to stick to this.

 

        You said depends how bad one's condition is, how strict they have to be. Mine is bad. I have multiple blockages in my arteries leading tothe heart. And since I'm od, the 'plaque,' 'calcium' & whatever the stuff is that clogs the arteries is od, stubborn & hard & not easy to dissolve - whereas he showed examples of a 44 year old man who had a real bad artery & it was perfectly corrected with the diet, the artery reversed to health but the test was done 2.5 years later to show it. He said when you're younger & the condition is beginning it's easier to cure. Mine therefore might be harder.

        If only I had remained a vegetarian this might not have become so serious. But then again, I'm not sure. As I did eat eggs then, can't recall if I ate fish. It was in 2009 that I quit due to a bad boyfriend, who took me to a place called 'Kennedy Fried Chicken ' & they had the most delicious breaded fish & chicken. At first, I bught only fish, then I deteriorated to chicken & went downhill after that. This guy was a sleazebucket & these types are sent by Satan from Hell to destroy your life.  I wrote a chapter on him - you read it Pete, & said how bad he sounded. And in retrospect, I'd forgetten it was he that infuenced me off being a veggie. It was incredibly hard to turn veggie but I did it - & he ruined it. It's true that BAD PEOPLE make you do BAD THINGS. Influence is strong - peer pressure.

    I don't know if I'll eat fish once a week or not. I'm a very obedient person. If I BELIEVE in something, I obey fanatically. When I took the vow of celibacy I obeyed 31 years. When God told me to quit & have fun I obeyed - I think I overdid it, misunderstanding God that I had to have 'fun' constantly by having as much sex as possible. That's pretty funny in retrospect.

    Right now I'm not going to say I'm in panic mode but desperation mode WHAT DO I EAT? And doing a new venture ALONE is more difficult than with a partner or group.

    Almost all the food in my house is non vegan. I will have to bit by bit feed it to the animals. Much of it is frozen or in cans.  But this project is giving me HOPE & turning my mind off my condition - this condition is DEADLY & if I believed I coud not reverse it, I woud e depressed 

    One cardio nurse began to describe what they would do They SAW YOUR CHEST OPEN! They remove your heart to work on it & put you on a fake heart for the time being!  I asked her about a guy who had open heart, he said he had to learn to breath again! {Arnold} - She said yes, it's true for some people. And I said I'd be a Siamse twin to the medica profession from then on & she said yes.

    There is NO WAY I would ever do this.

 

    And they talk abut statin drugs - no way either And the doc said putting a stent in was too dangerous - he could have done it during this procedure Monday - but he did not. I asked him why & he said it was too dangerous, I had too many blockages. I don't fully understand that as they coud have done a stent on ONE blockage? But I conclude God didn't want me to have ANY of this - God wanted me to reverse the condition with DIET - the natural way. So here I am, thanks to William. 

 

    I have also noticed how STUBBORN most of us are Even when you tell a person HOW to be healthy - what to eat - they make up excuses why they can't or they won't. All silly stuff to hide their cowardice And then, some pretend they are doing the right thing but they SNEAK IN the wrong - they are devious, they LIE. The only reason I did NOT go on this diet before is because I was following my diet Guru, Richard Schultze. His approach is slighty different - although I must say, it is also vegan. So I was following him part way But Schultze does NOT expain anything re NITRIC OXIDE like this man does His obsession is HERBS. And like most fanatics he is a one-way thinker - he is AGAINST VITAMINS!

 

        It's the science behind NITRIC OXIDE that's convinced me of this diet. 

 

        Pete, you've made it obvious you don't believe in this. Just wondering - what kind of diet do you follow? What is your weight? How tall are you? Are you thin, medium or overweight? 

        For me, I must become a FACTORY of NITRIC OXIDE, lol, & that will cure me. So I will do it.    Rasa

  1. I would say Rasa I halfway believe in this idea, and I take it with at least a grain of salt. It does make sense in a way, so I will not discount it, but I don't really quite put as much stock in it as William does. I don't personally follow any specific diet, just largely eat what I enjoy for the most part but if one must give it a name, one could perhaps call it "intuitive eating". I am 5' 9'' and weigh about 175, and have generally maintained that weight without trying since my early to mid 20s (prior to that I was actually rather underweight due to my very fast metabolism), and I naturally move around a lot. In that regard I am more fortunate than most people I think. I am omnivorous overall, but I don't eat dairy since it really doesn't agree with me and hasn't since I was a little kid for whatever reason. Otherwise, nothing really stands out about my diet.

    In any case, whatever works for you Rasa. Be creative if you have to, and discard anything that doesn't make sense to you and your inner voice. The nitric oxide concept in general does makes sense I think. Becoming a factory of nitric oxide, in other words may very well cure you, and I really hope to God that it does.
