The only problem is the OIL - the Esselstyne & Ornish diets do NOT permit oil! See my dilemma? Lots of things are delicious if oil is allowed but without it what do you do?
And veggie burgers as well - I love them. But BAKING a burger, as they suggest, instead of frying it? That means removing all the pots & pans out of my oven {ugh} - which I rarely use - for a burger. I did get a new teflon-style no stick pan but so far have not used it due to ambivalent feelings. Is it poison? Not sure if this surface is poison or not, when heated. So many things to think about, stressful I COULD NOT continue the salads I did for 13 days with only vinegar. Must use mayo albeit less than usual. Some compromises must occur. Maybe if one fries with just half a teaspoon? Don't know. BTW Pete I used olive oil every day it did not lower my cholesterol which it is SUPPOSED TO DO - my cho. was 360 a few months ago! Now it's 240 last they checked, still high. I think 150 is normal.
For cholesterol, anything under 200 is considered normal. And more importantly, the ratio of GOOD (HDL) to BAD (LDL) and "UGLY" (VLDL) cholesterol is more important than the raw number.
For Teflon, the jury is still out, but as long as it is brand new and not damaged or scratched it shouldn't be too bad. There are also copper and ceramic nonstick pans that don't contain Teflon as well.
I will note that mayo does still contain oil, usually soybean oil, and is since it also contains egg yolks it combined is clearly worse than olive oil. So perhaps a LITTLE bit of olive oil, VERY sparingly, would be OK instead of mayo. With a LOT of vinegar to counteract it.
Another controversy is coconut oil. Some say it's healthy, some say it's not. We do know it's good for skin when applied topically.
Indeed, that is the rub. One could carve out exceptions, of course, but too many exceptions would ultimately defeat the purpose.
